EVO Restaurant

The concept of EVO evolves from Chef Collier's culinary history which spans more than 25 years in feted kitchens across New York, San Francisco and Asia. Although Chef Collier's cuisine has been previously lauded for his groundbreaking California-French styles, he always harbored a fetish for creating dishes that his Sicilian grandmother mastered and taught him throughout his life. As such, EVO's menus are filled with a strong emphasis on scratch-made, house-cured and long-simmered flavorful dishes encouraged by the Chef's flair for creating exciting new next generation cuisine.

"EVO is Italian with a New York accent! it's about house-made pastas, pizzas, sausages and cured meats using centuries old curing methods and techniques. However we construct our dishes with sophistication and restraint to appeal to modernized palates.
